GF Cashew Butter Cookies
1/2 c. cold butter
3/4 c. coconut sugar
1 egg
3/4 c. cashew butter
1/2 tsp. baking soda
1/2 tsp. baking powder
1 1/4 c. brown rice flour
1/2 tsp. vanilla extract
1/2 tsp. pink salt
Preheat oven to 350 degrees. Cream butter and sugar. Whisk in egg, cashew butter and vanilla extract. In another bowl combine baking soda, baking powder, rice flour, and pink salt. Pour flour mixture into wet ingredients and combine thoroughly. Bake cookies 8-10 minutes.

Just bragging on these guys because they taste so awesome! I'd compare them to the Wendy's chicken nuggets I grew up eating as they have more of a kick of spice to them. They aren't bland nor overly salty either. I'm very impressed because I've had other GF chicken nuggets and the coating was disgusting due to it falling off the chicken pieces, it was rubbery and bland. These rock!

Homemade Vanilla Extract
Step One: Attain lovely bottle of Ciroc Vodka. You can use any Vodka that's good quality but I chose Ciroc because it's a French Vodka made from distilled grapes. In our family, we do no corn, wheat or barley.
Step Two: Attain some wonderful smelling vanilla bean pods. I get mine from Ebay or from Mountain Rose Herbs and you should expect to pay between $7 -$15 for 6-8 bean pods.
Step Three: Split each bean and scrape the inside out, carefully gather the contents and drop it down into the bottle.
Step Four: Make sure the cap on the Vodka is tight. Place on your shelf for about 4-6 weeks.
Strain if you don't want the tiny black specks in your baked goods but otherwise, it's fine. ^_^

Easy Peasy Vegetable Dip
1 c. mayonnaise (we used Earth Balance Original)
1/2 tsp. raw garlic, minced
1/2 tsp. dried minced onion
1 tsp. pink salt
pinch of black pepper
Place ingredients in a small bowl, mix thoroughly. Allow to set covered in fridge for 20 minutes so the flavors mix well.
Serve with broccoli, carrots, celery or your other favorite vegetables. ^_^

Gluten Free - Paleo Strawberry Shortcake
Cake Ingredients:
6 Eggs
1 tsp. Vanilla Extract (not the cheap crap)
1/2 c. Agave Syrup
1/2 c. Coconut Flour
1/2 tsp. Pink Salt
1/4 tsp. Baking Soda
1/2 c. Spectrum Shortening, melted
Direction: Preheat oven to 350 degrees. Into a large bowl add eggs, extract, and agave syrup. Whisk until mixed thoroughly. Add to this coconut flour, pink salt, baking soda and whisk until there are no lumps. Slowly drizzle in shortening as you whisk or beat with a hand mixer. Prepare a cake pan or pie plate. I would highly recommend you line it with parchment paper to make it easier to remove the final product out. Pour batter into prepared pan and bake for 35 minutes or until golden brown. Once baked, leave in pan for a few moments and then using the parchment paper, carefully remove and sit to cool on cooling rack.
Paleo Whipped Cream:
1 c. Coconut Oil, in liquid state not solid
1 c. Coconut Milk (Recipe Here)
1 T. Vanilla Extract (again, don't buy that cheap crap)
6 tsp. Arrowroot Powder
4 T. Agave Syrup
Strain 1 c. of coconut milk out from the recipe above and save the rest for later. Clean the blender really well! Add the strained coconut milk along with all the other ingredients into the blender. The goal is to emulsify all the ingredients together. Quickly pour the mixture into a glass or metal freezer safe container. Place in freezer for 20 - 30 minutes until a "skin" forms. You want all of the ingredients to be cool so feel free to press down that skin and feel the temperature underneath. Once the ingredients have cooled thoroughly, pour into a blender again and it will whip into the consistency of slightly firmer whip cream. This is not something that you can leave out so I would recommend serving immediately. Do not leave it out on the counter and expect it to stay together.
Strawberry Topping:
1 pkg Strawberries, frozen
2-3 T. Turbinado Sugar
Place the strawberries into a microwave safe bowl, defrost. Sprinkle on sugar, give it a toss or two.
Assemble yummy dessert just like in the picture above. ^_^

Gluten Free Chocolate Chip Walnut Cookies
2 1/4 c. Brown Rice Flour
1 tsp. Baking Powder
1 tsp. Baking Soda
1/4 tsp. Guar Gum (can sub. xanthan gum)
1 pkg. Enjoy Life Mini Semi-Sweet Chocolate Chips
1/2 c. Walnuts, chopped
1 c. Coconut Sugar
3/4 c. (12 T) Organic Butter
2 Free-Range, Organic Eggs
2 tsp. Vanilla Extract
Preheat oven to 350 degrees. In a large bowl combine, flour, baking soda, baking powder, guar gum, chocolate chips and walnuts. In a small bowl, cream butter and sugar together. Whisk in eggs and vanilla extract. Incorporate the wet and dry ingredients together. Line a 9x13 cookie sheet with parchment paper and drop spoonfuls about 2 inches apart. Bake for 8 minutes until lightly brown. Makes approx. 3 dozen cookies.

Kale & Butternut Squash
Braised Kale & Butternut Squash
(* Apologies for the lack of photo. I keep forgetting to grab the camera. )
2 T. Olive Oil
1 large bunch of Kale, washed, end stems removed and rough chopped
2 Garlic Cloves, minced
2 c. Butternut Squash, cubed (I use cubed frozen butternut squash and let it defrost)
1 tsp. Pink Salt
1/2 c. Water
1 tsp. Thyme
1/2 tsp. Ground Black Pepper
In a large skillet, saute minced garlic in olive until golden brown. Add seasonings, kale and squash. Cook until squash is al dente and kale has wilted.
This dish has a flavor reminiscent of Italian dishes and actually has a very "meaty" flavor to it. Very good stuff!

Mediterranean Chicken Breasts

Mediterranean Chicken Breasts:
Chicken Breasts
Marjoram
Olive Oil
Thyme
Pink Salt
Pepper
Balsamic Vinegar
Marinate chicken breasts in herbs, oil and vinegar for 1 hour. Bake in oven at 350 for 25 - 30 minutes, depending on oven.
Marinated Sandwich Veggies:
Romaine Lettuce Hearts
Whole Carrots
Olive Oil
Pink Salt
Pepper
Balsamic Vinegar
Slice romaine into strips. Take a potato peeler and create ribbons from the carrots. Place romaine and carrots in a bowl, drizzle on about 2-3 tablespoons of both olive oil and vinegar. Toss on salt and pepper to taste. Allow to marinate for 5 minutes. If you allow to marinate longer, lettuce will loose it's crunch.
Baked Teriyaki Skewers
(Marinating)
(Lunch For Hubby)
Chicken Breast, sliced into strips
Coconut Aminos
Sesame Oil
Shredded Coconut, dried
Pink Salt
Black Pepper
Dried Orange Zest
Garlic, thinly sliced
Skewers
Take a skewer and secure the strips of chicken onto it. For my family of five, I used about 3-4 pounds of raw chicken tenders and it filled two 9x13 pans. In your 9x13 baking pan, place the chickens skewers. Pour half the bottle of coconut aminos over the chicken and drizzle 3-4 tablespoons of oil as well. Season with salt and pepper to your preferences. Sprinkle dried shredded coconut, orange zest and thinly sliced garlic on top. Marinate for one hour, covered in refrigerator. Bake in oven for 25-30 minutes depending on your oven. Enjoy!

Gluten Free Fried Zucchini
Dry Ingredients:
1 1/2 c. coconut flour
1 tsp. salt
1/2 tsp. pepper
1/2 c. Daiya pepper jack cheese (or something similar)
3 medium zucchini, sliced diagonal thinly
Wet Ingredients:
3 eggs, beaten
Oil for frying
Put your chosen oil in a pan and heat up. Whisk eggs in a small bowl. In another bowl, add flour, salt, pepper and cheese together and mix well. Dip the zucchini alternately in the egg and the flour mix. You may have to firmly press the zucchini into the flour mix to get a thick coating. Fry about 1-2 minutes per side. Cool on paper towels.
I dub thee Confetti Cake!
A variation of my blueberry cake that I've decided to call Confetti Cake. My kids don't really like green vegetables so I've decided to try and sneak some more healthy stuff into the cake.
Dry Ingredients:
1 c. coconut flour
1 tsp. pink salt
1 tsp. baking soda
Wet Ingredients:
12 eggs
2/3 c. olive oil
2/3 c. agave
2 T. vanilla extract
Mix Ins:
1 c. blueberries, fresh or frozen
1/2 c. shredded carrot, organic if possible
1/2 c. shredded zucchini
1 tsp. chia seeds
2 handfuls of chopped walnuts
Preheat oven 350. Line a 9x13 casserole pan with parchment paper or use pan spray. In a bowl, add dry ingredients. Add wet ingredients and whisk thoroughly until no lumps are left. Carefully, fold in the blueberries, vegetables and chia seed. Pour into a 9x13 casserole pan and sprinkle walnuts on top. Bake for 25-30 minutes until lightly brown on top. Allow to cool before cutting.
* Cake freezer well! ^_^

Blueberry Breakfast Cake

Dry Ingredients -
1 c. Coconut Flour
1 tsp. Pink Salt
1 tsp. Baking Soda
2-3 handfuls of Walnuts, chopped
2-3 handfuls of Walnuts, chopped
Wet Ingredients -
12 Eggs
2/3 c. Olive Oil
2/3 c. Agave Syrup
2 T. Vanilla Extract
2 c. Frozen Blueberries
Preheat oven to 350 degrees. Line a 9x13 baking pan with parchment paper. Whisk wet ingredients together (excluding berries); add in dry ingredients (excluding nuts). Gently fold in blueberries. Pour batter into the baking pan and sprinkle chopped walnuts on top. Bake cake for 20 - 25 minutes until top is golden brown.
* Pardon the finger holes, my 3 year old daughter took tiny pinches out of it while my back was turned. Ahhh, children! It's amazing what kiddos can get into when you take your eye off them for just a moment. ^_^ *

1 c. Walnuts, chopped

In a saucepan, add the first seven ingredients and heat over low heat. Whisk ingredients until they turn into the consistency of a pudding. Stir in the four remaining ingredients.
To Make Cookies: Drop spoonfuls onto a wax lined cookie sheet and put into fridge until cookies solidify.
To Make Bars: Line a 9x13 lasagna pan with wax paper and pour the mixture in. Smooth out the top then pop in the fridge until solid.
* These have to be kept in the fridge due to the coconut oil melting. Otherwise, they are very yummy! ^_^

GF Valentine's Date with My Love

We swung by Sweet Theory Baking Co and picked up a GF Chocolate Chip Cookie Stack and a GF Whoopie Pie. The Cookie Stack was amazing! It has a light, airy filling in the middle similar to a twinkie but the sweetness doesn't overpower the cookies. Both were amazing! It's called a Bakery but really, it's very much like a quiet, cozy coffee shop.

Our final stop was over at Native Sun {when am I not there?}, where we both chose a nice gluten free meat and vegetable based dinner. After noshing on cookies and candy, we thought it might be a good idea to allow our last stop to be somewhere that had plenty of vegetables and meats to choose from. It was all together a very fun trip and since we have such young children, every date has to count!
Please support local businesses that support our diet! The owners of these companies are very passionate about their customers needs and in today's time, that's just a sad rarity. Until next outing!

Gluten Free Blueberry Chia Pancakes
1 1/3 c. brown rice flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
1/2 tsp. guar gum
1 tsp chia seed
2 eggs
3 T. olive oil
1 c. water
1/2 c. frozen blueberries
Coconut Oil
1. In a medium bowl, combine dry ingredients. Whisk in eggs, oil and water. Fold in blueberries.
2. Heat 1-2 tablespoons of coconut oil in a skillet, cook pancake for 1-2 minutes on each side until golden brown.
This recipe works best when you make the pancakes about the size of your palm or slightly smaller.

Review: Enjoy Life Chocolate Chips
I've purchased these numerous times for use in trail mix, cookies, brownies, pancakes and they are so delicious. They taste very similar to milk chocolate without the dairy. In fact, these little morsels are free of dairy, soy, and GLUTEN! Yay! These are very tiny chocolate chips but if your looking for something bigger check out their " MEGA CHUNKS". Love this product! I really appreciate the fact that the company goes the extra mile and tells you what kind of a facility these are made in. Kudo's to Enjoy Life for such an awesome product!

Review: Shakti Almond Joyfuls
When I was a kid I really enjoyed being able to eat Mounds candy bars, as they contained my two favorite things: coconut and chocolate. But as I developed allergies, there were many things that were no longer allowed in my diet and artificial ingredients were one of them. Mounds contains artificial flavors and other unhealthy ingredients. So for many years...I was Mound-less.
Until I discovered Shakti Life Kitchen's Almond Joyfuls! They have chocolatey goodness, coconut and almonds! Oh yeah! These are mounds of raw sweetened coconut that have a whole almond in the center which is coated in a chocolate shell and sprinkling of coconut. You get four of these to a package at $7.59 each. It's a tad expensive but remember your spending money on real ingredients, not junk. Another great thing is your supporting a local business that makes good-for-you treats.

Review: Native Sun Gluten-Free Chicken Salad Sandwich
For years I've had to watch as my gluten-eating husband was able to enjoy nice wraps at the deli while I was stuck with just meat and vegetable options. Now, I'm not saying that there's anything wrong with that but every now and then you just want something similar to what you ate before you went gluten free. Variety is the spice of life baby! :-)
The wonderful sandwich pictured above is Native Sun's relatively NEW Gluten Free Chicken Salad Sandwich. It's basically two toasted slices of Rudi's Gluten Free Original bread with lettuce, tomato, onion and Native Sun's original chicken salad. The chicken salad is out of this world good! It's got an amazing texture going on with sweet raisins, onions, celery and tender chicken breasts which is coated in a seasoned vegenaise sauce.
If your running errands and happen to be in their area, check this baby out because I don't know how long they will have it around. And if this isn't enough to fill you up, they have other NGA (no gluten added) items from the cold bar to go with it.

At one of the local Publix stores I found Rudi's Gluten Free Original (aka White) Bread for $3.99 a loaf. Normally, you expect to pay somewhere between $4 - $6 a loaf. Now, I don't know about you but my family of five can inhale one of these little GF loaves in one meal. Needless to say, when I find a deal as good as this, I MUST pass it on to other mommies. Odd ball out
Have you ever been different from everyone else? Whether you wear glasses, eat a different diet, or are handicapped, you know what it's like. Well, I have gluten intolerance and it's hard trying to find places where I can eat. Oh yeah! On top of that I can't have any dairy, non-fermented soy, eggs, commercially grown produce, corn, artificial dyes, artificial flavors, artificial preservatives, pears, shrimp, citrus, cranberries, peppers and garlic. That's not all of it by the way, just what I can remember. I have a huge list of things that I have to keep in check or my health problems start mounting again.
So, who am I? I'm a married, mother of 3 who resides in Jacksonville, FL. I've spent half my life with unexplained health issues that were always blamed on my weight and the other half fighting to undue all the damage that processed foods did. I've worked for over six years with the Feingold Association, first as a volunteer contacting big companies and then finally on the board of directors. I assist families who are on the Feingold Program who have questions regarding the implementation of the diet. I give presentations to local organizations about the effects that additives can have on children mentally, physically and behaviorally.
My own personal difficulties with dieting has lead me to make it a goal of mine to help as many people as I can with changing their dietary habits. I've done S.A.D., weight watchers, raw vegan, vegetarian, low-fat, low-salt, low-sugar, and was almost put on phen-phen before they pulled it for it's dangerous side effects. Now, I'm on a modified paleo diet, meaning that the bulk of my diet is vegetables, fruit, meat, nuts/seeds, healthy fats and water but I will partake in delicious gluten free non-paleo treats.
I've spent hundreds of dollars trying different gluten-free products only to have them taste as bad as the cardboard they are sold in. Hopefully, I'll save you money while introducing you to not only good tasting gluten-free products but some local delicacies as well.
