GF Cashew Butter Cookies
1/2 c. cold butter
3/4 c. coconut sugar
1 egg
3/4 c. cashew butter
1/2 tsp. baking soda
1/2 tsp. baking powder
1 1/4 c. brown rice flour
1/2 tsp. vanilla extract
1/2 tsp. pink salt
Preheat oven to 350 degrees. Cream butter and sugar. Whisk in egg, cashew butter and vanilla extract. In another bowl combine baking soda, baking powder, rice flour, and pink salt. Pour flour mixture into wet ingredients and combine thoroughly. Bake cookies 8-10 minutes.
Applegate Farms Gluten Free Chicken Nuggets
Just bragging on these guys because they taste so awesome! I'd compare them to the Wendy's chicken nuggets I grew up eating as they have more of a kick of spice to them. They aren't bland nor overly salty either. I'm very impressed because I've had other GF chicken nuggets and the coating was disgusting due to it falling off the chicken pieces, it was rubbery and bland. These rock!

Homemade Vanilla Extract
Step One: Attain lovely bottle of Ciroc Vodka. You can use any Vodka that's good quality but I chose Ciroc because it's a French Vodka made from distilled grapes. In our family, we do no corn, wheat or barley.
Step Two: Attain some wonderful smelling vanilla bean pods. I get mine from Ebay or from Mountain Rose Herbs and you should expect to pay between $7 -$15 for 6-8 bean pods.
Step Three: Split each bean and scrape the inside out, carefully gather the contents and drop it down into the bottle.
Step Four: Make sure the cap on the Vodka is tight. Place on your shelf for about 4-6 weeks.
Strain if you don't want the tiny black specks in your baked goods but otherwise, it's fine. ^_^

Easy Peasy Vegetable Dip
1 c. mayonnaise (we used Earth Balance Original)
1/2 tsp. raw garlic, minced
1/2 tsp. dried minced onion
1 tsp. pink salt
pinch of black pepper
Place ingredients in a small bowl, mix thoroughly. Allow to set covered in fridge for 20 minutes so the flavors mix well.
Serve with broccoli, carrots, celery or your other favorite vegetables. ^_^
